1 kg beef, cut into cubes 🥩

6 small onions, peeled 🧅
3 carrots, sliced 🥕
2 cloves garlic, minced 🧄
1 bouquet garni (thyme, bay leaves, parsley) 🌿
2 tbsp tomato paste 🍅
2 tbsp all-purpose flour 🌾
250 g mushrooms, quartered 🍄
Salt & pepper to taste 🧂🌶️
Fresh parsley, chopped 🌿
Instructions:
1. Cook the Smoked Turkey:Heat 1 tbsp olive oil 🫒 in a large pot over medium heat.Add smoked turkey 🦃, cook until crispy, then remove and set aside.
2. Sear the Beef:In the same pot, sear beef cubes 🥩 in batches until browned on all sides.Remove and set aside.
3. Sauté the Vegetables:Add the remaining olive oil 🫒, onions 🧅, and carrots 🥕.Cook for 5 minutes until the onions start to brown.Stir in garlic 🧄 and cook for another minute.
4. Build the Stew:Return beef 🥩 and smoked turkey 🦃 to the pot.Sprinkle with flour 🌾 and stir well.Add beef broth 🍲, bouquet garni 🌿, tomato paste 🍅, salt 🧂, and pepper 🌶️.
5. Slow Cook:Bring to a boil, then reduce heat to low.Cover and let it simmer for 2–3 hours until the beef is tender.
6. Add Mushrooms:Stir in mushrooms 🍄 during the last 30 minutes of cooking.
7. Final Touches & Serving:Adjust seasoning if needed.Garnish with fresh parsley 🌿.
