Ingredients:
– 4 boneless, skinless chicken breasts
– 1 bunch of asparagus (trimmed)
– 1 cup shredded mozzarella cheese
– 2 tablespoons olive oil
– 1 teaspoon garlic powder
– 1 teaspoon paprika
– 1 teaspoon Italian seasoning
– Salt and pepper to taste
– 1 tablespoon chopped fresh parsley (for garnish)
Instructions:
๐น๏ธ1. Preheat the oven to 375ยฐF (190ยฐC).
๐น๏ธ2. With a sharp knife, create a pocket in each chicken breast, being careful not to cut all the way through.
๐น๏ธ3. Season both sides of the chicken breasts with garlic powder, paprika, Italian seasoning, salt, and pepper.
๐น๏ธ4. Fill each chicken breast with 3-4 asparagus spears and approximately 1/4 cup of mozzarella cheese, then secure the opening with toothpicks.
๐น๏ธ5. In a large oven-safe skillet, heat olive oil over medium-high heat. Add the chicken breasts and sear for 3-4 minutes on each side until they are golden brown.
๐น๏ธ6. Move the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165ยฐF (75ยฐC).
๐น๏ธ7. Before serving, remove the toothpicks and garnish with fresh parsley.
