These Cheesecake Banana Pudding Bites are a fun, bite-sized dessert that brings together layers of creamy cheesecake, banana pudding, and a crunchy vanilla wafer base. Perfect for any occasion or as a sweet treat!

  • Ingredients:
  • For the Base:
  • 1 cup crushed vanilla wafers (plus extra for garnish)
  • 3 tbsp unsalted butter, melted
  • For the Cheesecake Layer:
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • For the Banana Pudding Layer:
  • 1 package (3.4 oz) instant banana pudding mix
  • 1 1/2 cups cold milk
  • 1 large banana, sliced
  • For Garnish:
  • Whipped cream
  • Additional crushed vanilla wafers
  • Banana slices


Directions:


1. Prepare the Base:
Preheat your oven to 350ยฐF (175ยฐC).
Line a mini muffin tin with paper liners or lightly grease it.
In a small bowl, combine the crushed vanilla wafers and melted butter. Mix until the crumbs are evenly coated.
Press about 1 teaspoon of the crumb mixture into the bottom of each mini muffin cup.
Bake for 5 minutes, then set aside to cool.
2. Make the Cheesecake Layer:
In a medium bowl, beat the cream cheese, sugar, and vanilla extract until smooth and creamy.
Spoon or pipe a small amount of the cheesecake mixture into each muffin cup, over the cooled crust.
3. Make the Banana Pudding Layer:
In a separate bowl, whisk the instant banana pudding mix and cold milk until thickened. Let it sit for about 5 minutes to fully set.
Spoon or pipe the banana pudding over the cheesecake layer in each cup.
4. Chill:
Refrigerate the bites for at least 2 hours, or until fully set and firm.
5. Garnish and Serve:
Top each bite with a dollop of whipped cream, a sprinkle of crushed vanilla wafers, and a slice of banana.
Serve chilled and enjoy!
