Ingredients:
– 2 slices of bread (a sturdy option like sourdough is recommended)
– 1 cup cooked chicken breast, either shredded or sliced
– 1/2 cup marinara sauce
– 1/2 cup grated Parmesan cheese
– 1/2 cup shredded mozzarella cheese
– 2 tablespoons olive oil or butter
– 1/2 teaspoon dried basil (optional)
– 1/2 teaspoon garlic powder (optional)
Instructions:
1. Prepare the Chicken:
– If not already done, cook and either shred or slice the chicken breast. You may use leftovers or prepare it fresh. Season with salt and pepper according to your preference.
2. Assemble the Sandwich:
– On one side of each slice of bread, spread a thin layer of marinara sauce.- On one slice, layer the shredded chicken over the sauce.- Sprinkle the Parmesan and mozzarella cheeses over the chicken.- For added flavor, optionally sprinkle dried basil and garlic powder over the cheese.- Place the other slice of bread on top, with the sauce side facing down.
3. Cook the Sandwich:
– Heat a skillet over medium heat and add 1 tablespoon of olive oil or butter, adding more if a crispier crust is desired.- Place the sandwich in the skillet and cook until the bread is golden brown and the cheese has melted, approximately 3-4 minutes per side. Gently press down with a spatula to ensure even grilling.
4. Serve:
– Remove the sandwich from the skillet and allow it to cool for a minute before slicing. Serve while hot.
