Ingredients:

– 2 lbs beef chuck roast

– 1 tbsp olive oil

– 1 onion, chopped

– 2 carrots, chopped

– 2 celery stalks, chopped

– 3 cloves garlic, minced

– 2 cups beef broth

– 1 (14-oz) can crushed tomatoes

– 1 tsp dried rosemary

– 1 tsp dried thyme- Salt & pepper to taste

– 2 tbsp fresh parsley, chopped (for garnish)

Directions:

1. In a large pot, heat the olive oil over medium-high heat. Season the beef with salt and pepper, then sear it until browned on all sides.

2. Remove the beef from the pot and add the onion, carrots, celery, and garlic. Sautรฉ until softened, approximately 5 minutes.

3. Return the beef to the pot and incorporate the beef broth, crushed tomatoes, rosemary, and thyme.

4. Bring the mixture to a boil, then reduce the heat and cover. Let it simmer for 3-4 hours until the beef is tender enough to shred with a fork.

5. Shred the beef in the pot and combine it with the rich sauce.

6. Garnish with fresh parsley and serve hot.
