A delightful fusion of crispy chickpea and sweet potato fritters paired with a creamy, tangy avocado sauce. These fritters are flavorful, rich in nutrients, and perfect as appetizers, snacks, or light meals.

Ingredients

For the fritters:

  • 1 cup canned chickpeas, drained and rinsed
  • 1 cup mashed sweet potato
  • ยฝ cup oat flour (or all-purpose flour)
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • ยฝ teaspoon garlic powder
  • ยฝ teaspoon onion powder
  • ยฝ teaspoon salt
  • ยผ teaspoon black pepper
  • 1 egg (or a flax egg for a vegan option)
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons olive oil (for frying)

For the avocado sauce:

  • 1 ripe avocado
  • 2 tablespoons Greek yogurt (or coconut yogurt for a vegan alternative)
  • 1 tablespoon lime juice
  • 1 small garlic clove, minced
  • ยผ teaspoon salt
  • 2 tablespoons water (adjust for desired consistency)

Instructions

Prepare the fritters:

  1. In a large bowl, mash the chickpeas with a fork or potato masher, leaving some texture for a slight crunch.
  2. Add the mashed sweet potato, oat flour, cumin, smoked paprika, garlic powder, onion powder, salt, black pepper, egg (or flax egg), and chopped parsley. Mix well until a thick batter forms.
  3. Shape the mixture into small patties, approximately 2 inches in diameter.
  4. Heat olive oil in a large skillet over medium heat. Once hot, carefully place the fritters in the pan and cook for 3-4 minutes on each side, or until golden brown and crispy.
  5. Remove from the skillet and transfer to a paper towel-lined plate to absorb any excess oil.

Prepare the avocado sauce:

  1. In a blender or food processor, combine the avocado, Greek yogurt, lime juice, minced garlic, salt, and water.
  2. Blend until smooth and creamy, adjusting water as needed for the desired consistency.

Serving Suggestion

Serve the crispy fritters warm, drizzled with the avocado sauce, or with a side for dipping. Enjoy as a standalone snack, in a wrap, or as part of a salad.
